The LSUS Foundation is proud to partner with the alumni team of Pork and Fork BBQ to host BBQU, the Inaugural LSUS Foundation BBQ competition. Proceeds from the event will support various LSUS activities. The festivities will include something for everyone.Think BBQ, baseball and hot air balloons for a campus festival like no other.
*Taste some of the finest BBQ around!
*Hot air balloons will be present and offering tethered rides!
*Beer garden because everyone loves BBQ and a cold beer.
*Screenings for the new documentary short showcasing the LSUS Pilot baseball team's season that claimed the LONGEST WINNING STREAK IN ALL OF COLLEGE BASEBALL HISTORY!
Winning BBQ teams will take home amazing cash, prizes and bragging rights!
*$15 BBQ and Baseball Ticket admission includes People's Choice tasting, Kids and Hot Air Balloon Zone access, indoor screening of the baseball short to cool off.
*UP your Game by adding a $25 hot air balloon tether ride to your admission.
*All in! VIP air condition tent for $100- access to full bar, hors d'oeuvres, VIP parking, priority hot air balloon tether ride and fun swag!

BBQ COMPETITORS INFO:
This will be a non-sanctioned, non-traditional BBQ Competition with categories of Brisket, Chicken & Ribs (MEAT PROVIDED) with an open dish People's Choice Category (TEAM PROVIDED). ALL CATEGORIES REQUIRED TO COMPETE.
COMPETITOR SCHEDULE:
Friday- May 15
Competitor Setup: 8am-5pm
Competitors Meeting (Meat Handout)- 5:30pm
Saturday- May 16
Judges Meeting: 10am
People’s Choice Tasting: 11am-2pm
Chicken Turn-in: 11am
Ribs: 1pm
Brisket: 3pm
Awards: 6pm
Entry Fee:
$250/team- (6 person team)
Awards:
Grand Champion- $3000 and Title Belt
First Place Brisket- $1000 and award
Second Place Brisket- $500
Third Place Brisket- $250
First Place Chicken- $1000 and award
Second Place Chicken- $500
Third Place Chicken- $250
First Place Ribs- $1000 and award
Second Place Ribs- $500
Third Place Ribs- $250
People's Choice- $1000 and award
MEAT:
Meat will be inspected and handed off to teams at Competitor's Meeting on Friday May 15 @ 5:30pm. One team member must attend. MEETING IS MANDATORY TO COMPETE.
Each team will receive the following: 1 brisket, 2 slabs of ribs, 2 whole chickens
REQUIRED CATEGORIES:
Brisket (meat provided)
Chicken (meat provided)
Ribs (meat provided)
People’s Choice (team provided)
Dish has to be meat-based. Has to be prepared and smoked on site. Please provide 550-600 samples.
RULES:
-All meat/dishes must be prepared/smoked on location.
-Any heat source is allowed.
-No garnish
-Turn in your box on time. No grace period.
All judges have been hand selected and will be taking all of the following into account while scoring:
FLAVOR-50% of score
Smoke- should compliment the meat but not overpower
Seasoning- should enhance the meat but not be too hot, sweet, salty, bitter etc.
Sauce- (if applicable) should blend well with meat, seasoning and smoke.
Aroma- is it pleasant and does it mend well with the taste?
TEXTURE/TENDERNESS-25% of score
Brisket- pull test. Is it too tough or falling apart?
Ribs- is it too hard to pull off bone or overcooked and falls off too easily.
Chicken- cut easily and tender with a juicy texture
APPEARANCE-25% of score
Box presentation- does it impress you?
The cut- is the meat shape/size uniform and consistent
Bark/skin- is it impressive and have
“the look”
Sauce- is it evenly applied or messy? Does it take away or enhance the meat.
