Basic Knife Skills-3 class series

Thank you for your interest in the Basic Knife Skills Training from the UNITE HERE Mid Atlantic Training and Scholarship Fund. This 3 class series (2/17-19) is from 3-4 hours and can support a class size of 10-15 students. Must have at least 1 year of cooking experience. Students will leave with a basic understanding of knife safety in a kitchen, learn cutting techniques, and will demonstrate these cutting techniques. The key to safety and learning is repetition. Learning blocks for the class are below:

• Sanitation and set up
  
• Knife safety: handling, carrying, cutting, washing
  
• How to safely hand the knife to someone else
  
• Knife sharpening: how to hone with a steal
  
• Cutting techniques: small, medium and large dice cuts
  
• Cutting techniques: rough chopping, slicing, julienne, mincing
