This event will explore the interplay between art and architecture, focusing on the experimental concept of Castalia + Sfumato (pairing craft cocktails with botanical fragrances) and the modern design of the new residential development, The Terraces at Woodbridge - itself a bold compliment to the historic Woodbridge neighborhood. Come and immerse yourself in the beauty of natural and designed elements coming together, creating delight, the sense of discovery, and the reminiscence of emotions. Meet the man behind the concept of Sfumato, and author of the book, Cocktail Theory, Dr. Kevin Peterson.

Dr. Kevin Peterson: Unlocking Scent and Flavor
While the cocktails at Castalia are all rooted in the classics, Kevin has applied his studies of the senses, perfumery, and culinary arts to push the boundaries of the cocktail world. From pairing scents with cocktails, to custom botanical distillates, to cricket tinctures that mask off notes in cocktails, Kevin has continually sought the outer edges of flavor and perception in pursuit of transcendent experiences. At this talk, Kevin will describe his philosophy on flavor, how a deep understanding of the senses informs his approach, and taste guests through several examples of unexpected effects that are possible with cocktails.
Classics to Cutting Edge
To make this experience even more immersive, Dr. Peterson will provide a sampling of scented cocktails. You’ll taste one or two refined, classically inspired creations. Prepare to be surprised and inspired!
Dr. Kevin Peterson's working life began in kitchens, ranging from fast food to fancy French. Eventually taking a more academic route, he received a BA in physics and Ph. D. in mechanical engineering, taking a combustion research job at General Motors and moving to Detroit in the early 2010's. After a stint in corporate research, he left to co-found Sfumato and Castalia, a perfumery and cocktail bar located in Detroit's Midtown neighborhood, where he is the Nose and resident Cocktail Scientist.
