This flight features three benchmark expressions from leading producers:
Aramasa X-type Junmai– a refined and textural expression showcasing Aramasa’s signature low-intervention philosophy, with layered umami, vibrant acidity, and a delicate yet persistent finish.
Juyondai Betsusen Morohaku Junmai Daiginjo– an archetype of elegance and precision, offering lifted aromatics, silky texture, and a seamless balance between sweetness and acidity.
Jikon Nabari Junmai Daiginjo – a highly polished, terroir-driven sake with crystalline purity, fine structure, and a restrained yet expressive aromatic profile.
Tasting them side by side reveals how differences in rice polishing, regional identity, and brewing philosophy influence texture, aromatic intensity, and overall balance.
This flight highlights the diversity at the highest level of modern sake, while providing a clear framework to understand stylistic contrasts among Japan’s most sought-after producers.
In addition, we will be offering light bites prepared by our friend of Creston, Kuni Nakajima(Nakaji). While not designed as a formal pairing, these dishes will undoubtedly enhance the experience and add an extra layer of enjoyment to the time shared together.
