Özlem Warren has taught more livestream classes than any other teacher at the Milk Street Cooking School—so we couldn’t be more delighted to welcome her back to our in-person school this fall for an evening of cooking, conversation, learning and eating together. At this hands-on class led by Özlem, the focus is on the recipes that define and describe the culinary capital that is “Īstanbul”—both the city and the name of her most recent cookbook.
The night begins with a demonstration of a creamy, nourishing red lentil soup that’s lightened and brightened with a batch of homemade pul biber-spiced oil. As the soup simmers, you’ll don your aprons for some hands-on cooking guided by Özlem. On the menu is her crispy, flaky and perfectly balanced Spinach & Cheese Gözleme, a skillet dish that’s practical enough for casual weeknights and impressive enough for company. Plus, Özlem will share alternative filling variations and smart make-ahead tips to make the recipe even more versatile and doable.
As you enjoy a family-style dinner that includes the dishes you’ve made plus a batch of Özlem’s perfect-for-fall Beet Salad with Olives, Hazelnuts and Spiced Oil, you’ll get to talk to Özlem about her books, her travels, the culinary tours she runs and much more. The meal closes with a batch of buttery semolina halva, a gently sweet dessert that’s rich in history across Türkiye and that comes to Özlem from a beloved auntie. We wrap up with time to have your copy of “Istanbul,” which is included with your ticket, signed.
