Advanced Sourdough: Sweet & Savory Inclusion MasteryReady to take your sourdough beyond the basics? This hands-on advanced sourdough class is designed for experienced bakers who want to confidently work with inclusions while maintaining structure, fermentation, and beautiful crumb.
Using one base dough, each participant will create two mini sourdough loaves using two different inclusion techniques, allowing you to see and feel the difference in real time.
What we’ll make:
• One savory mini loaf with inclusions added during lamination
• One sweet mini loaf with inclusions added during stretch and folds
Both loaves will be shaped in class and taken home ready to bake.
What you’ll learn:
• When and how to add inclusions without weakening dough
• Lamination vs stretch and fold techniques
• Managing moisture, oils, and sugar-based add-ins
• Maintaining dough strength and fermentation balance
• Preventing dense crumb and uneven distribution
• Scaling inclusions for home baking or small-batch production
What’s included:
• Two shaped, ready-to-bake mini sourdough loaves

This class is best suited for bakers who have already made sourdough successfully and are ready to refine their skills. This is not a beginner class.
