This Philippine Independence Day, we are back for the second run of our Adobo Festival! We invite all home cooks, professional chefs and cooking students to a culinary challenge like no other. Join us for the Adobo Festival and get a chance to be crowned this year's Adobo King or Queen. Showcase your culinary talents with your best rendition of our national dish.
We will have two types of awards:
1. Chefs' Choice Trophy
Present your adobo dish to our panel of judges. Tell them the story behind your adobo. What regional variation are you trying to achieve? They will carefully evaluate your dish based on taste, presentation, creativity and the ability to capture the essence of traditional adobo flavours.
2. People's Choice Award
Throughout the Philippine Independence Day event, guests will taste your adobo and vote on their top choice. Only one vote per person.At the end of the day, we will tally the votes and announce the winner. Any meat or plant-based meal (vegan/vegetarian) in your adobo style is welcome.
Mechanics:
1. Please prepare around 100 bite-sized servings of your dish (about 2 tablespoons) so people can decide and vote on the best adobo dish. Give your adobo version a name so people can identify what it is. If you would like to add descriptions, please do so.
2. We will provide the serving dishes. Please bring enough adobo to let people sample it. Mas maraming makakatikim, mas maraming pwedeng magvote.
3. Prepare one serving of adobo (about 1 cup, rice is optional) to present to the judges for Chef's Choice.
4. All dishes must be kept at the appropriate temperature (if necessary) to ensure quality and safety during the event. If you need to cook before the event, we could provide you with power or you could cook with lpg outside the hall -- you will need to bring your own cooking materials. Like last year, we are happy for you to bring your food pre-cooked and just heat it up during taste-test. Judging and taste test will be inside the hall.
5. Contestants should ensure that the food is safe for consumption (i.e., no ingredients that may trigger common allergies should be used without proper labeling).
Cash prize and trophy for the winners. Cash prizes will be determined closer to the date.
