A Vegetarian Indian–Swahili Cooking Workshop by Dimpu & Naz!
Experience an elegant vegetarian culinary journey that blends the warmth of Indian traditions with the coastal influences of Swahili cuisine. Begin with Paneer Tikka, delicately marinated in aromatic spices and grilled to perfection served with a Fresh Mint Chutney. Continue with a comforting Swahili Coconut Vegetable Medley, where seasonal vegetables are gently simmered in a fragrant coconut curry, served with fluffy Basmati Rice. Finish off with Shahi Tukda, a classic Indian bread pudding enriched with saffron, cardamom, and nuts. Paneer Tikka - Cubes of paneer marinated in thick yogurt, ginger-garlic paste, mustard oil, and a medley of spices like cumin, coriander, turmeric, and red chili. Grilled or pan-seared to perfection for that charred, smoky flavour.
🌿Mint Chutney (Pudina Chutney) - A vibrant and refreshing blend of fresh mint and cilantro, infused with zesty green chilies, fresh tomatoes, red onion, mango powder, spices and a hint of tangy lemon. This versatile chutney delivers a burst of cooling flavours with every bite, perfectly balancing spice and freshness.

Swahili Coconut Vegetable Medley - A light yet deeply flavourful coastal dish featuring fresh, seasonal vegetables gently simmered in a creamy coconut curry. Infused with ginger, aromatic spices, and the subtle citrus notes of lime leaves, the curry is finished with fresh cilantro. Served with fragrant basmati rice, this dish captures the essence of Swahili coastal cuisine—fresh, balanced, and effortlessly delicious.

Shahi Tukda (Indian Bread Pudding with Rabri) - Golden toasted or fried bread slices soaked in cardomom infused sugar syrup, topped with thick, creamy rabri (milk solids), and garnished with saffron, rose water, and slivered nuts – a perfect way to end to the meal.
