This December, 𝗣𝗼𝗿𝗰𝗮𝗹𝗼𝗿𝗰𝗮 invites you to 𝗔 𝗖𝗵𝗿𝗶𝘀𝘁𝗺𝗮𝘀 𝗖𝗲𝗹𝗲𝗯𝗿𝗮𝘁𝗶𝗼𝗻 – 𝗮𝗻 𝗲𝘃𝗲𝗻𝗶𝗻𝗴 𝗼𝗳 𝗰𝗮𝗻𝗱𝗹𝗲𝗹𝗶𝗴𝗵𝘁, 𝘄𝗶𝗻𝘁𝗲𝗿 𝗳𝗹𝗮𝘃𝗼𝗿𝘀, 𝗮𝗻𝗱 𝗳𝗶𝗻𝗲 𝗜𝘁𝗮𝗹𝗶𝗮𝗻 𝘄𝗶𝗻𝗲𝘀, paired with a festive 𝘁𝗵𝗿𝗲𝗲-𝗰𝗼𝘂𝗿𝘀𝗲 𝗺𝗲𝗻𝘂 𝗿𝗼𝗼𝘁𝗲𝗱 𝗶𝗻 𝗗𝗮𝗻𝗶𝘀𝗵 𝘁𝗿𝗮𝗱𝗶𝘁𝗶𝗼𝗻. As a special treat, we’ll conclude the night with a 𝘄𝗶𝗻𝗲 𝗼𝗳 𝗺𝗲𝗱𝗶𝘁𝗮𝘁𝗶𝗼𝗻 𝗿𝗲𝘃𝗲𝗮𝗹𝗲𝗱 𝗶𝗻 𝘁𝗵𝗲 𝗳𝗶𝗻𝗮𝗹𝗲.
At 𝗣𝗼𝗿𝗰𝗮𝗹𝗼𝗿𝗰𝗮, we believe every bottle carries more than flavor, it tells a story of land, family, and tradition. Founded by Marco, an Italian sommelier, and Jeanette, a Danish storyteller, Porcalorca brings 𝗮𝗿𝘁𝗶𝘀𝗮𝗻𝗮𝗹 𝘄𝗶𝗻𝗲𝘀 𝗳𝗿𝗼𝗺 𝘀𝗺𝗮𝗹𝗹 𝗳𝗮𝗺𝗶𝗹𝘆-𝗼𝘄𝗻𝗲𝗱 𝘃𝗶𝗻𝗲𝘆𝗮𝗿𝗱𝘀 𝗮𝗰𝗿𝗼𝘀𝘀 𝗜𝘁𝗮𝗹𝘆 𝘁𝗼 𝗗𝗲𝗻𝗺𝗮𝗿𝗸, celebrating 𝗮𝘂𝘁𝗵𝗲𝗻𝘁𝗶𝗰𝗶𝘁𝘆, 𝗵𝗲𝗿𝗶𝘁𝗮𝗴𝗲, 𝗮𝗻𝗱 𝗽𝗮𝘀𝘀𝗶𝗼𝗻.
Guided by our sommelier, you’ll journey through a carefully curated selection of Italian wines, from vibrant whites and expressive reds to contemplative wines of meditation, while our storyteller brings each label to life with tales of the vineyards, families, and traditions behind them.

𝗙𝗶𝗻𝗴𝗲𝗿 𝗙𝗼𝗼𝗱 𝗪𝗲𝗹𝗰𝗼𝗺𝗲
- Course: Crispy rye bread (rugbrød chips) with whipped salted butter, roasted almonds glazed with Christmas spices, olives and Bolgheri extra virgin olive oil – Aldrovandi
- Wine: 𝗜𝗻𝘁𝘂𝗶𝘇𝗶𝗼𝗻𝗲 – 𝗠𝗲𝘁𝗼𝗱𝗼 𝗖𝗹𝗮𝘀𝘀𝗶𝗰𝗼 𝗕𝗿𝘂𝘁 𝗡𝗮𝘁𝘂𝗿𝗲 𝗥𝗼𝘀é – 𝗟𝗮 𝗣𝗶𝗮𝗻𝗮 𝗪𝗶𝗻𝗲𝗿𝘆 (𝗘𝗺𝗶𝗹𝗶𝗮-𝗥𝗼𝗺𝗮𝗴𝗻𝗮) - Fine bubbles and a dry, elegant palate cleanse the butter and salt, while subtle notes of spice and rose petal echo the Christmas almonds.

- Course: Smoked salmon (Røget laks) with red cabbage salad marinated in redcurrant, Nordic shrimps on rye bread with light mayonnaise and fresh dill

– 𝗥𝗼𝗲𝗿𝗼 𝗔𝗿𝗻𝗲𝗶𝘀 𝗗𝗢𝗖𝗚 – 𝗖𝗮𝘀𝗰𝗶𝗻𝗮 𝗱𝗶 𝗠𝗲𝗹𝗮 (𝗣𝗶𝗲𝗱𝗺𝗼𝗻𝘁) - Crisp and floral, with its hallmark almond finish cutting through the smokiness of the salmon.

- Course: Vesterhavsost, Gammel Knas, Danablu
- Wine: 𝗕𝗼𝗹𝗴𝗵𝗲𝗿𝗶 𝗦𝘂𝗽𝗲𝗿𝗶𝗼𝗿𝗲 𝗗𝗢𝗖 𝟮𝟬𝟭𝟵 – 𝗔𝗹𝗱𝗿𝗼𝘃𝗮𝗻𝗱𝗶 (𝗧𝘂𝘀𝗰𝗮𝗻𝘆) - Polished and elegant, with silky tannins and Mediterranean herbs, standing up to aged cheeses and rounding out the pungency of Danablu.

- Course: Risalamande (traditional Danish rice pudding with almonds and warm cherry sauce), Æbleskiver (Christmas doughnuts with powdered sugar and redcurrant jam)

Wine of Meditation (Finale)
To close the evening, we will unveil a contemplative wine:
Wine: 𝗥𝗲𝗯𝗼𝗿𝗼 𝟮𝟬𝟭𝟵 – 𝗣𝗶𝘀𝗼𝗻𝗶 (𝗧𝗿𝗲𝗻𝘁𝗶𝗻𝗼) - A rare red from dried grapes, layered with dark fruit, cocoa and sweet spice. A wine of meditation, offered as a memorable finale to the celebration.
