Over this 3 day course led by Lyson Marchessault, you will learn how to build a fermenting crock, which will be able to hold any kind of ferment/pickles. You will learn how to hand-build a container with a mote, to create a water-sealed piece with a lid. Participants will have the opportunity to build their piece, glaze it and finally participate in a kimchi making tutorial in the final session.

This course will encompass the entire process, from learning how to hand build a crock; making your own fermentation inside the crock; and finally discussing how pickling and fermentation can help develop a balanced diet and gut health.


Lyson Marchessault is a French-Canadian and British artist based in London, primarily focusing on ceramics. Her work has an interest in ancient techniques and forms, incorporating folklore and ritual into raw materials and clay that she harvests herself from the landscape. Part of her practice also involves ecology, fermentation and regenerative art.

  • This course is suitable for beginners and intermediates, a basic knowledge of hand-building with clay is required.
